Yamahai is a traditional way of fermentation. The flavor is like roasted nuts, and taste is dry, full-bodied and robust nature of minerals. It has long complex finish. Great for Sashimi when chilled, and for oily food when warmed. It is also good to pair with fish dishes, shabu shabu, lobster, crab and other seafood, salads.
